Baingan Chholia ki Sabzi is commonly made in my house for lunch. My mother made it in a very easy way. As I know Baingan Ki Sabzi is hated by almost every kid except Baingan Ka Bhartha which is loved by everyone. But this Baingan Chholia is another delicious dish of Baingan. The way my mother makes this Baingan Chholia is unique, tasty, and easy to make. It also looks tasty and hard to recognize baingan in it.
Hara Chholia is a Green Chana that is mostly available in February-March. You can easily find that with the street hawkers just like other vegetables. Aloo Chholia is the most common Sabzi made in every household. Chholia Pulao is also a tasty pulao recipe. It not only tastes good but also full of protein and vitamins. You can also store Chholia in the freezer for 10-15 days. It looks like a full-plant with green buds on it, peels that buds, and get green chana into it. This is how it looks like. For making this recipe firstly you have to peel the baingan and cut into dices and put dice baingan in the water otherwise it will turn brown.
So, Firstly you have to prepare tadka for this recipe then add hara chana add baingan in it. You can also add some Moth Dal Wadi in it that gives tangy flavor in this Sabzi. At last, mash it with the help of kadchi (Ladle). Whenever you serve, spread some desi ghee on to it that gives more delicious flavor in Baingan chholia. Now, enjoy it with hot chapati and some salad.

Baingan Chholia Ki Sabzi
Ingredients
- 1½ Baingan (Eggplant)
- 1 cup Hara Chana
- 2 tbsp vegetable oil
- 1 tsp Cumin Seeds (jeera)
- 2 Chopped Onions
- 1 Chopped Tomato
- 1½ tsp Turmeric powder
- 1 tsp Red chili powder
- 1 tbsp Dhania Powder
- Chopped Green Chilli
- Salt (as per taste)
- 3 Moth Dal Wadi
Instructions
- Firstly peel the baingan and diced it. Put them in the water.
- Now heat pressure cooker add 2 tbsp of oil.
- Add Cumin Seeds (jeera) into it.
- When jeera start popping up then add Chopped onion in it.
- Mix it well. Then add chopped green chilli.
- Now, add tomato and 1½ tsp of turmeric powder.
- Mix it until oil oozing out of the masala.
- After that add 1 cup of Hara Chana in the pressure cooker.
- Add diced Baingan in it and mix it for while.
- Now add 1 tsp of red chilli, 1 tbsp of dhania powder and salt (as per taste),
- Add 3 moth dal wadi in it.
- Mix it well. Now cover the pressure cooker with help of plate and add some water on it.
- Then add 3-4 tbsp of water in it and wait for 1 whistle.
- After 1 whistle, Mash it with help of kadchi.
- Now the Baingan Chholia Sabzi is ready to enjoy with hot chapati.
How To Make Baingan Chholia K Sabzi Step By Step With Photos:
