Aloo Gobi Recipe is a simple and delicious recipe that is come from North India. As we know the winter season is going on and a lot of green vegetables are available in the market. In north India, Gobi (cauliflower) is easily available in the winters only otherwise there is a rare chance of seeing Gobi (cauliflower). This Aloo (potato) Gobi (cauliflower) recipe is the most common recipe that is made in everyone’s household.  Most of Punjabis love to have Gobi-Parantha in breakfast. The Gobi- Parantha with curd is my favorite breakfast in winters.

But here I am going to share a recipe of Aloo-Gobi. It is also lunchbox friendly lunch that you can pack for the office as well as for school. Aloo-Gobi is a Punjabi style dry vegetable dish. Aloo-Gobi mostly serves as the main course, it goes well with chapati and boondi-raita. I love to have Boondi raita with Aloo-Gobi.

The main specialty of this recipe is that here Aloo-Gobi is cooked in the steam. It is a healthy recipe. No spicy spices or masalas are used in this Aloo-Gobi Recipe. This recipe is simple but delicious. Here I am using spring onion, Ginger-garlic paste, diced potato (aloo), Gobi (cauliflower) and some basic spices in it. Ingredients

  • 500 gm Cauliflower (Gobi)
  • 3 Diced Potato
  • 1 cup Spring onions
  • ½ tbsp Cumin seeds (jeera)
  • 1 tbsp Ginger-Garlic paste
  • ½ tbsp Red chili powder
  • tbsp Turmeric Powder
  • 1 tbsp Coriander Powder (Dhania Powder)
  • 3-4 Green chili (optional)
  • Salt (As Per Taste)

Instructions

  • Firstly, drain and chop 500gm florets. Diced 3 potatoes with the help of a knife.
  • Then heat a pan and add 1 tbsp of oil in it.
  • Add cumin seeds in the pan.
  • Add 1tbsp of ginger-garlic paste in the pan. Stir it for few seconds.
  • After that, add 1 cup of spring onions. Mix it well.
  • When the onion is cooked after 1-2 minutes then add ½ tbsp of red chili, ⅓ tbsp of turmeric powder, 1 tbsp of coriander powder and salt (as required).
  • Mix it for 3-4 minutes, Once tadka is ready then add diced potatoes and chopped cauliflower (Gobi) in the pan.
  • Mix it together for 5-7 minutes.
  • Then cover the lid of the pan for 25-30 minutes and stir it in small intervals and make sure that the potato or gobi (cauliflower) is not stuck on the bottom of the pan.
  • When Potatoes are cooked then add green chilli on it, which gives a spicy and delicious flavor.
  • Aloo-Gobi is now ready to serve with chapati and boondi raita.

Notes:

  • Do not finely chop the potatoes and cauliflower. You should always dice the potato and cauliflower in medium-small size.
  • Do not overcook the potatoes and gobi (cauliflower) otherwise it becomes mushy.
  • You can also add tomatoes in the Aloo-Gobi recipe for little tanginess.
