Sambar Recipe | How to make Sambar for Idli

Sambar is a lentil-based spicy soup and curry recipe. It is an essential dish of South Indian lunch or breakfast. As we can see many South Indian dishes are mostly served with Sambar, like Rice, Idli, Medu Vada, Dosa, Rava idli, etc. But Idli-Sambar is the best combo.

It is made with some roasted spices and blended vegetables. There are many ways to make Sambar. Here I am going to share a unique way to make Sambar. This is my Mom’s recipe of Sambar.

In this Sambar recipe, freshly roasted spice powder is used. This freshly homemade Sambar powder is helpful in enhancing the taste of Sambar. It adds a lot of flavor in it and also has health benefits. You can roast all spices in a thick bottom pan on medium flame and stir continuously making sure that spices do not get burnt.

When all spices are get roasted then kept them aside on a plate. The main specialty of this Sambar recipe is that the more veggies you can add more flavor you can get.

For making Sambar, firstly roughly chop or dice all veggies and rinse Arhar Daal and Moong Daal at least 3-4 times to remove all impurities. Now put all veggies, daal, some spices (mentioned below), and water in a pressure cooker and wait for 2 whistles. In between the time of the whistle, blend all roasted spices in steel mortar. After 2 whistles blend the veggies and daal with a blender.

Then take a pan to add oil in it and add all blended spices in the pan for 2-3 minutes, pour masala in Sambar, and again put a pressure cooker on a medium flame for 4-5 minutes and garnish with fresh coriander leaves. Now Sambar is ready to serve with Coconut chutney, Idli, rice, vada, dosa or any South Indian dish you can like. I hope you guys would like and try this unique Sambar Recipe.

Ingredients

  • 1 cup Ghiyaa
  • ½ cup Cauliflower
  • ½ cup Cabbage
  • 1 Chopped Potato
  • 1 cup Chopped Onion
  • 2 Chopped Tomato
  • 1 inch Chopped Ginger
  • 4-5 Chopped Garlic Cloves
  • 1 tbsp Mustard seeds (Roasted)
  • tbsp Methi seeds (Roasted)
  • 1 tbsp Corriander Seeds (Roasted)
  • 1 tbsp Bhuna Jeera (Roasted Cumin Seeds)
  • 3-4 Cloves
  • 2 Small Cinamon Stick
  • 1 tbsp Amchoor (Mango Powder)
  • ½ cup Moong Daal
  • 1 cup Arhar Daal
  • 1 tbsp Red Chili Powder
  • 1 tbsp Turmeric Powder
  • tbsp Salt (as per taste)
  • 2 Green Chilli
  • 4-5 Fresh Curry Leaves

  • Firstly, rinse and chop the vegetables, various types of vegetables you can add in Sambar like pumpkin, brinjal (eggplant), ghiyaa, potatoes, cauliflower, cabbage, tomato, carrot, onions more vegetable you can add more taste in Sambar you can get. So add all chopped vegetables in a pressure cooker.
  • Now, rinse Moong daal and Arhar daal atleast 3-4 times for removing all impurities.
  • Add both daals in a pressure cooker and along with daals add 4-5 cups of water in the cooker.
  • At last, add 1 tbsp of Red Chilli powder, 1½ tbsp of salt, 1 tbsp of turmeric Powder.
  • Leave the cooker on high flame and wait for 2 whistles.
  • After 2 whistles, blend all cooked vegetables with the help of a blender.
  • Now, take another pan and add 2-3 tbsp of oil.
  • Add 2 green chili and 4-5 fresh curry leaves in a pan.
  • Add 2 small sticks of cinnamon and Sambar Masala in the pan.
  • Leave the masala pan for 2-3minutes.
  • When masala is cooked then pour it in cooker.
  • At last, add Amchoor (Mango Powder) in the Sambar. You can also add tamarind pulp in place of Amchoor.
  • Leave the Sambar on low-medium flame for 5-7 minutes and garnish with fresh coriander leaves.
  • Now, Sambar is ready to serve with Idli, Dosa, Vada any South Indian dish you can like.

How to make Sambar Masala.

  • For making Sambar Masala you just need to roast 1½ tbsp of methi seeds, 1 tbsp of coriander seeds, 1 tbsp of mustard seeds, 1 tbsp of Cumin seeds and 2-3 clove on the thick bottom pan and stir continuously make sure that spices do not get burnt.
  • Blend all roasted spices in a steel mortar.
  • Mix all blended spices in a plate. Now the Sambar Masala is ready.

Notes

  • You can use Imli or tamarind in place of Amchoor Powder (Mango Powder).
  • Use more and more vegetables for better taste.
  • Always use homemade Sambar Masala instead of using readymade Sambar Masala. Ready-made Sambar Masala will not give you a authentic south Indian flavor in Sambar. Moreover they have artificial flavor and color.

How to make Sambar Spice Masala

Sambar Masala is the soul of Sambar. You don’t need to buy ready-made Sambar Masala which contains a lot of stabilizers and emulsifiers. Here is how to make fresh Sambar Spice Masala at home.

  • For making Sambar Spice Masala you just need to roast 1½ tbsp of methi (Fenugreek) seeds, 1 tbsp of coriander seeds, 1 tbsp of mustard seeds, 1 tbsp of Cumin seeds and 2-3 clove on the thick bottom pan and stir continuously make sure that spices do not get burnt.
