Firstly, rinse and chop the vegetables, various types of vegetables you can add in Sambar like pumpkin, brinjal (eggplant), ghiyaa, potatoes, cauliflower, cabbage, tomato, carrot, onions more vegetable you can add more taste in Sambar you can get. So add all chopped vegetables in a pressure cooker.
Now, rinse Moong daal and Arhar daal atleast 3-4 times for removing all impurities.
Add both daals in a pressure cooker and along with daals add 4-5 cups of water in the cooker.
At last, add 1 tbsp of Red Chilli powder, 1½ tbsp of salt, 1 tbsp of turmeric Powder.
Leave the cooker on high flame and wait for 2 whistles.
After 2 whistles, blend all cooked vegetables with the help of a blender.
Now, take another pan and add 2-3 tbsp of oil.
Add 2 green chili and 4-5 fresh curry leaves in a pan.
Add 2 small sticks of cinnamon and Sambar Masala in the pan.
Leave the masala pan for 2-3minutes.
When masala is cooked then pour it in cooker.
At last, add Amchoor (Mango Powder) in the Sambar. You can also add tamarind pulp in place of Amchoor.
Leave the Sambar on low-medium flame for 5-7 minutes and garnish with fresh coriander leaves.
Now, Sambar is ready to serve with Idli, Dosa, Vada any South Indian dish you can like.
