Dahi Bhalle is a popular North Indian street food and delicious chaat or snack. Dahi is the Hindi meaning of Yogurt (curd). Dahi Bhalle is the most loved chaat that is made in my house because it is my mom’s favorite chaat and my mom’s Dahi Bhalle chaat recipe is famous in my family because she makes Bhalle super soft and tasty.

Dahi Bhalle is also called Dahi Vada. Dahi Bhalle is a mixture of two lentils i.e Urad dal and Moong dal, yogurt, saunth chutney (tamarind chutney), green chutney and mixed spices that are the main ingredients of Dahi Bhalle.

Everyone loves to eat ‘thande-thande’ (cool-cool) Dahi Bhalle in summer. The first bite of Dahi Bhalle chaat blasts flavor into your mouth. You can feel the flavor of every spice and chutney in your mouth. In Dahi Bhalle, you can also add papdi, pomegranate and some dry fruits like raisins or cashews also added in it that give a sweet crunch to the chaat. Some street style Dahi Bhalle also comes with banana slices but personally, I don’t like banana slices in Dahi Bhalle.

Everyone wants to try Dahi Bhalle recipe but the main questions that come in our mind is ‘How can we make soft Bhalle at home’? Nothing to worry about the softness of bhalle, it is so easy to make soft bhalle at home. Just simply soak urad dal and moong dal overnight or 6-7 hours and then make a thick batter with the help of a mixer or hand grinder and add salt (as required). Now beat it, until the batter color gets lightened and you see fluff in a batter. Now heat oil in Kadai and drop batter in the oil with the help of fingers. When bhalle is ready then soak the fried bhalle in the water for 10 minutes then squeeze it with your hands and garnish it with chutneys and some mix spices.

Ingredients

Ingredients for Bhalle

  • 1 cup Urad Dal
  • 1 cup Moong dal
  • ½ tbsp salt (as required)
  • Oil (as required for deep frying)
  • enough water for soaking

Dahi Bhalla Topping

  • 1 cup Dahi (Curd)
  • 1 tbsp Green Chutney
  • tbsp Tamarind Chutney
  • ½ tbsp Roasted Cumin Seeds powder
  • Salt (as per taste)
  • Chaat Masala
  • 4-5 Chopped Cashew
  • 4-5 Raisins

Instructions

Method of making Bhalle

  • Rinse 1 cup of urad dal and moong dal, soak both lentils overnight or 7-8 hours.
  • After that, add ½ cup of water in the bowl of dals, grind it with the help of grinder or mixer and make a thick batter.
  • Now, add ½ tbsp of salt in the batter.
  • Then, beat or whisk it until you can see fluff in the batter or the quantity of batter little more than before that means batter is now ready for deep frying.
  • Heat oil in the pan.
  • You can also add a small drop of batter in oil for checking the right temperature of deep frying.
  • After that drop batter with the help of your hands in the hot oil. (The size of Bhalla is depended on you ).
  • When it turns crispy and little golden then flip the other side of Bhalla.
  • When it's done then drain it in the separate plate.
  • Fry all Bhalla in the same way.
  • Then soaked them in the water for 9-10 minutes.
  • Gently, squeeze all of them.

Making of Dahi Bhalla

  • Place Bhalla on the plate and add plain curd on to it.
  • Then add green chutney and tamarind chutney on it.
  • Sprinkle some bhuna jeera powder (roasted cumin powder), Salt, red chili powder, chaat masala on it.
  • then garnish it with raisins and some chopped cashew. This will give little sweet crunch in it.
  • Dahi Bhalla is now ready to serve.

Notes

  • The main thing for making soft Bhalla is beat/whisk the batter that makes bhalla soft and tasty.
  • The batter of lentils should be thick.
