Take 300 gm of Chole(Chickpeas) and soaked overnight.
In the next morning add ½ tbsp of baking soda and leave that pressure cooker on high flame and wait for 1 whistle.
Heat oil in the pan and add bay leaf and jeera (cumin seeds) in the pan.
Then add finely chopped onions.
When onions cooked then add ½ cup of tomatoes and 1-2 green chilli in the pan.
Mix it well. Then add 1½ tsp of turmeric powder, 1 tsp of red chili powder, 1 tbsp of coriander powder, 1 tbsp of salt( as required).
Mix it well and add some water that masala is not stuck in the bottom of the pan.
When masala is cooked then add that boiled Cholle (chickpeas) in the masala.
Mix it well. Add 1 tbsp of Amchoor (mango powder) and kasturi methi in the chole.
After that add that boiled water of Chole (chickpeas) and also add water in it. The consistency of Chole (Chickpeas) depend on you.
Let it boiled around10-15 minutes.
So, finally Chole Bhature is now ready to serve with curd, onion salad, fried green chilli or mango pickle whatever you like.
