Turai is a vegetable that is full of nutrients and vitamins but most people don’t like it. But according to me, it’s not that bad that most people think of it. The way I am going to share this recipe is tasty and so easy to make. Here I am not using special ingredients, it is a simple recipe but yet tasty.

The thing that makes Turai recipe delicious is the way of serving it. Whenever you serve Turai, you have to add 2-3 tbsp of Desi ghee on it and serve it with green chili that will enhance the flavors of your bite. This Sabzi is mostly served with Hot chapati.

Turai is part of the cucumber family it is also called a Loffa in scientific language. There is a lot of names of this vegetable Turai Ki Sabzi (Turiya) in North India and Beerakaya Curry in South India, Gilki Ki Sabzi in Hindi. It is a popular vegetable in India, Vietnam, and China. It is soft little spongy, dark green-colored, and has little soft seeds in it. This is how it looks like. (See the picture below).

For making this Turai recipe, firstly, wash, peel the skin of the Turai with a peeler and cut it half-length wise and chop it. Then heat a pan and prepare a temper for Turai and add chopped Turai in it. Cover the pan and let it cook, Turai leaves water naturally and you should not worry about it. Let it cook and stir it in small intervals. Don’t forget Moth wadi that also enhances the flavor of Turai. When water is completely soaked in the Turai that means it is now ready to serve with hot chapati. This is a simple and tasty recipe of Turai (Ridge Gourd recipe).

Ingredients

  • 500 gm Turai (Ridge Gourd)
  • 2 Finely chopped onions
  • ½ tbsp Jeera (Cumin seeds)
  • ½ tbsp turmeric powder
  • 1 tbsp Coriander Powder
  • Salt (as per taste)
  • ½ tbsp Red chili powder
  • 3-4 Moth Dal Wadi
  • 1 Chopped Green chilli

Instructions

  • Firstly, wash and peel the skin of the Turai and chop it.
  • Heat a pan and add jeera(cumin seeds), chopped onions,and ½ tbsp of turmeric powder in the pan.
  • Then add chopped green chilli. Mix it.
  • After that add chopped turai in the pan. Mix it for 5 minutes.
  • Add 1 tbsp of coriander powder, ½ tbsp of red chilli powder, 3 moth wadi and salt (as required). Mix it very well.
  • Now, cover the pan and let it cook, stir it in small intervals.
  • You can notice turai is leaving the water naturally don't worry about let it dry.
  • When turai is completely dry that means turai is now ready to serve and please don't forget add desi ghee on it and take raw green chilli while serve that chilli gives a little crunch in the bite and ghee enhances the flavor of the turai.
